Sea urchins

Sea urchins are a culinary delicacy and when considering the work required to pick them from the seabed, open them and clean them up you will understand why a small tub costs around 9 euros! Yet it is definitely worth the money! Sea urchins can form part of a delicate meal and eaten raw with some squeezed lemon juice otherwise they can be added to past and will make up my Dad’s favourite pasta dish! Follow this recipe and you will smell the aura of the sea as soon as you dip in your fork…

Ingredients for 4 persons:

  • 2 tubs fresh sea urchins
  • 3 fresh tomatoes
  • 1 garlic clove
  • parsley
  • salt & pepper
  • extra virgin olive oil
  • 400g spaghetti

Bring the water to boil and throw in the spaghetti. Cook as indicated on the packet’s instructions. In the meantime, pour some olive oil in a pan, add the smashed garlic clove and leave to brown, then remove. Peel the tomatoes chop them into small cubes and add to the pan leaving them on high heat for a couple of minutes. When the pasta is ready, drain and add to the tomatoes, add the sea urchins, chopped parsley, salt & pepper and some olive oil. Bon appetit!
