Tomato time
It’s the perfect time to find a large variety of fresh tomatoes which are ideal for summer lunches and can be used in many many ways! Here’s a seasoned tomato dish which can be served cold or warm with crusty bread and good quality extra virgin olive oil!

For 4 persons you require:
- 1 kg fresh tomatoes
- a bunch of fresh herbs (basil, mint, parsley)
- olive oil
- chili pepper
- grated pecorino or parmesan
- breadcrumbs
- garlic
- oregano
- salt
Wash the tomatoes and halve them. Finely chop the herbs together with the garlic cloves. Add some breadcrumbs to the herb mixture, pecorino, salt and chili pepper (according to your taste). Then, place the tomatoes in an oiled baking dish, fill them in with the aromatic mixture, top up with some dried oregano and pour some olive oil on top. Cook in a pre-heated oven of 200 degrees Celsius for around 15 minutes until the surface of the tomatoes is golden. You would not resist dipping in the bread!
