Peel and slice 1 large red apple into thin slices. In a frying pan, melt the butter over a moderate heat. When the foam disappears, add the sugar, and stirring, wait until it completely melts (about 1 minute). Put the apple slices in the sugar and fry on both sides until golden (5–8 minutes).
Beat eggs with a fork and a pinch of salt. Pour the egg mixture over the apples and cook for about 2 minutes, occasionally pushing the lightly toasted edges of the omelet towards the center.
When the omelet is almost ready, remaining slightly liquid in the center, pour a little thick fat cream into the middle of the omelet and put 2 tablespoons of boiled condensed milk. Sweet omelet with caramelized apples.
Tuck the omelet on one side with a plastic spatula and wrap a third of the omelet inside. Tilt the pan over the plate so that the omelet slides off the pan. When half of the omelet is already on the plate, turn the pan sharply so that the omelet is formed into a tube. Divide the omelet into 2 portions and serve hot.
Garnish with cocoa or powdered sugar.
