Go on an epicurean journey and experience cabernet sauvignon from around world at Pinot Provence in Costa Mesa — passport not required. Don’t worry about making travel plans because Pinot’s executive chef Alfonso Ramirez and certified sommelier Jorn Kleinhans assembled a “travel itinerary” of delicious fare paired with cabernet sauvignon from France, Italy, Australia and California.

Cabernet sauvignon is one of the world’s most widely grown grapes. Because of its abundance, the cabernet sauvignon grape is used to make many varietals and has the potential to yield a variety of flavors which is why it serves as an ideal choice of wine to make a country-by-country comparison. The Sommelier Fireside Dinner “Cabernet Sauvignon from Around the World” on November 20, from 6-9 pm allows guests to make that side-by-side comparison. The dinner and pairings will be approached to provide guests with a better understanding of the significance terroir plays in shaping each wine’s flavor.

Pinot Provence is part of the Patina Group of restaurants and is known as one of the top dining destinations in Orange County. Pinot serves award-winning French cuisine in stylish and chic surroundings. The restaurant is ideally located at The Westin South Coast Plaza, between the renowned shopping destination South Coast Plaza and Orange County’s leading performing arts venue, Segerstrom Center for the Arts.

Kleinhans is a certified sommelier and wine specialist. He formed Wine Elite, which provides sommelier-guided wine tasting experiences. Kleinhans has conducted more than 50 formal wine tastings and developed a large following in Orange County and beyond. Through his tastings, Kleinhans helps develop individuals’ ability to distinguish quality in wine.

“Cabernet Sauvignon from Around the World” will feature a selection of wines hand-picked by Kleinhans and will be paired with five courses prepared by Executive Chef Alfonso Ramirez.

The edible excursion will begin with an amuse — ravioli made with creamed swiss chard, quail egg and parmesan emulsion and will be paired with Sauvignon Blanc from the Loire: 2012 Reverdy Ducroux, Sancerre/Cabernet Franc from Loire: 2007 Remy Pannier Chinon, France.

Braised pork cheek with red wine risotto and port sauce will be served as the second course. The wine pairings will come from across the pond with two California wines — Cabernet Sauvignon, California: 2007 Ferrari Carano, Alexander Valley/Cabernet Sauvignon, California: 2007 Beringer Reserve, Napa Valley.

The third course will be a maple leaf duck breast with fig marmalade, Okinawa sweet potato and huckleberry reduction paired with a Cabernet Sauvignon blend, Italy: 2009 Cum Laude Castello Banfi, Tuscany/Cabernet Sauvignon blend, Australia: 2008 Penfolds Bin 407, South Australia.

The final course before dessert will be roasted venison with chanterelle mushrooms, celery root puree and smoked cherries paired with Cabernet Sauvignon, France: 1995 Chateau Les Ormes De Pez, St. Estephe, Bordeaux/Cabernet Sauvignon, California: 2004 Chateau Montelena, Napa Valley.

For dessert, Chef Ramirez will prepare a chocolate pudding cake with devil’s food cake, tapioca and mascarpone ice cream paired with Zonin “Baccorosa” Asti Spumante.
