I have been in pursuit of pizza perfection for at least ten years. Ever since I moved to Central Georgia from the West Coast of Florida in 2002, I have needed to fend for myself when it came to cuisine I craved. Pizza was on the top of the list.

Yet, the perfect crust remained elusive, whatever I tried. Yes, what I made on my pizza stone in my GE electric was better than the chains’ offerings, but it lacked that je ne sais quoi you get from the more gourmet shops.

That is until we happened upon the Baking Steel. Like a pizza stone, this solid piece of hardware lives in your oven and imparts that pizza magic all of us crave to our homemade pies. Unlike a pizza stone, the Baking Steel actually works.

While the steel is a great addition to the oven, you also must have a good recipe for crust. Here, too, the folks at Baking Steel can help. Their blog contains excellent recipes complete with large photos and easy-to-follow directions — including one for a no-knead dough that’s pretty perfect. In fact, I have also made their English Muffins and used the Baking Steel as a stove-top griddle to smash the best burgers I’ve had in a long time. Yes, this steel multitasks.
