It is a group of food additives which slows the growth of bacteria and other microorganisms, such as yeasts and molds, and prevents them from producing toxins that cause food to spoil.

To inhibit or kill unwanted microbes.

To make foods with a long shelf life (for example, by preventing fats from becoming rancid)

To keep foods fresher longer (e.g., by inhibiting mold growth on bread).
