From Scratch

It occurred to me, standing in my kitchen on a gray January 2021 afternoon that I have evolved. I stood flipping large Blue Mexican Shrimp in potato scratch, getting them prepped to fry. Change was woven into this very act of making light and crispy shrimp tacos for lunch on a weekday. It was actually a particularly stressful day “at work,” but there I was taking the few spare moments I had to make a comparability quick “from scratch” meal for myself.
