Geek Eats! Episode 2: White Chicken Chili

As the weather turns colder, and crummy Summer (my least favorite season) gives way to Autumn, there’s a whole slew of things like apple cider doughnuts, horror movie marathons, Octoberfest beers, and Halloween every-motherfucking thing that make this time of year even better! Chiefly among those things is a steaming bowl of chili, and OF COURSE I love a heavy, red meat version with peppers & tomatoes (although despite being from Ohio I believe it’s just gross to pour it over spaghetti), but one spoonful of this yummy concoction will convince you it’s just as worthy an addition to the game table for your pals.

Now there’s a school of thought that the only way to prepare a white chicken chili is the loooonnnng way, where you boil a chicken in seasoned water, then use that broth to cook your beans (that you soaked overnight), and I’m sure that would turn out great, but we’re doing the shortcut method so you can get straight to dice-rolling and merry-making, okay? A roasted chicken from the local supermarket and canned beans will do nicely, I assure you.

White Chicken Chili

Ingredients:

1 roast chicken,(remove skin, and cut meat into 1/3 inch chunks)
Adobo seasoning,(amount varies to taste)
Olive Oil
Bay Leaf
Large can of chicken stock
1/2 pint of heavy whipping cream
1 large yellow onion
1 can of diced green chiles
1 can of chickpeas
1 can of white northern beans
1 can of black beans

Dice yellow onion, and sweat in stew pot with olive oil, salt & pepper until softened. Add chicken, Adobo seasoning (couple tablespoons ought to do it), then stir in chicken broth and Bay Leaf. Cover and simmer for 45 minutes on medium heat, stirring occasionally. Remove Bay Leaf, and stir in heavy whipping cream & diced green chiles. Reduce heat to low, and simmer 30 minutes while stirring occasionally. Drain & rinse beans before adding to pot to heat throughout before serving.

Top with sliced jalapeños, sour cream & corn bread (don't skimp on the cornbread!), and be sure to have a couple bags of Fritos as well!
