How to Change the World, One Meal at a Time

Our planet is overburdened by the demands being placed on it. Studies have shown that the ratio of energy input to food energy output for a single cow is about 40:1. This isn’t very efficient when you consider how many people could be fed in a year’s time on the plant-based food that cow has consumed.

On the upside, making a slight change to our diets can make a big impact worldwide. Changing out one or two meat-based meals a week can significantly reduce the amount of feed required to mature one cow (or other animal). A more long-term view is more people getting to eat a solid meal for less investment of resources and less methane being produced and released into the environment. In addition, reducing your intake of animal fats can reduce your risk for many diseases.

How to Make the Switch

It may seem like it would be really difficult to transition your family into a diet that utilizes more responsibly-grown plant-based foods, but it’s not! For instance, tofu, seitan and eggs are great alternatives to meat and provide a good deal of protein. So does a combination of rice and beans. The recipe below is infinitely customizable. Zucchini, artichoke hearts… use whatever your heart desires!
