10 Common Terms Every Taco Lover Should Know

So Let’s taco ‘bout it!
Tortilla — The foundation of every taco, the humble tortilla comes in corn or flour varieties. Soft or crunchy, it cradles the tasty filling.
Asada — When you see carne asada, it refers to meat (usually beef) that’s been marinated and grilled. A classic protein choice!
Al Pastor — Meat stacked on a vertical spit, rotisserie style, next to a pineapple. The sweet pineapple juices baste the pork, beef, or chicken as it rotates.

Queso — Spanish for cheese, and an essential topping for any self-respecting taco! Oozy Oaxaca cheese is a personal fave.
Aguas Frescas — Refreshing sweet drinks, usually made from fruits or grains, are the perfect taco accompaniment.
Gringa — A flour tortilla with melted cheese inside around meat. The soft, cheesy bite is so satisfying!
Birria — Meat braised in a savory, peppery red sauce, then crisped on the grill. Dipped in consommé… BBQ taco heaven!
