If you are looking for a gingery cookie that is different from the normal gingerbread, here’s a holiday recipe for you! These cookies are great warm out of the oven and will get you in the mood for the holidays!

Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup butter
  • 1/2 cup molasses
  • 1 egg
  • 1/3 cup chopped crystallized ginger
  • 2 cups flour
  • 1 teaspoon ground ginger
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Sanding Sugar

Foodie Byte: These cookies pair nicely with hot cocoa or cider.

Instructions

  1. Preheat oven to 375 degrees.
  2. Beat first five ingredients until creamy.
  3. Add in flour, ground ginger, baking soda and salt.
  4. Cover cookie sheet with parchment paper.
  5. Drop dough by teaspoons full and sprinkle with sanding sugar.
  6. Bake for 12 minutes for soft cookies.
