Keto Chocolate Chip Cookies 🍪

Keto desserts give me life! Really, they do. I can honestly feel the difference between desserts loaded in sugars and modified ingredients vs a Keto appropriate indulgence.

What you’ll need for this one:

Wet Ingredients

  • 1 & 1/2 tsp vanilla
  • 1/4 cup coconut sugar
  • 1/2 cup ghee/butter/coconut oil melted

Dry Ingredients

  • 1/2 tsp Pink Himalayan sea salt
  • 1 tsp baking soda
  • 1 tbsp gelatin
  • 1/3 arrowroot starch
  • 1/3 coconut flour
  • 1 cup dark chocolate chips (save for the last step)

Step 1: Melt your butter or ghee or coconut oil

Fats assemble ! Gather your lovely fat of choice & melt her down. I actually made a mistake in this one and put both coconut oil & butter (oops, sorry not sorry😛) so I had to add more coconut flour but technically you can pick just one of the above.

Step 2: Add in the coconut sugar

Once you’ve got a nice bowl of melted fats, add in some coconut sugar to sweeten that baby up.

Step 3: Gather your dry ingredients in a bowl and mix until evenly distributed — leave the chocolate chips aside initially

As viewed below, I had to use an extra serving of coconut flour to offset my extra butter. In general, simply whisk your dry ingredients together! I know right, how easy is this recipe so far ?? It’s like, almost too easy.

Step 4: Mix the dry & wet — I mean, this recipe is legit child’s play (and yet I still managed to mess it up..🙃)

Mix the wet & dry ingredients first before the chocolate chips just to get an even base. Once that’s done, add in the chips and try to turn the mix often so the chips distribute evenly.

Step 5: Oven Time 🔥

Pop those puppies in the oven at 350 degrees C until golden and enjoy!
