Keto Dinner — Bison Burgers & Pizza 🍕

Guys I swear, pizza on keto is doable and so are big juicy burgers. It’s amazing how slight variations of commonly consumed foods are not only delicious, but actually leave you feeling 110% more satisfied and less sluggish. With that being said, allow yourself to indulge in open mindedness and see below for how you can create a tasty keto dinner.

What you’ll need:

  • ground bison meat
    -1 jalapeno pepper
    -1 avocado + 1 egg
    -tomatoes
    -1 head of cauliflower
    -lactose free mozzarella (and regular parmesan)+ tomato sauce
    -portobello mushrooms
    -mixed greens (if you want to add lettuce in your burgers)

Step 1: Getting the pizza crust started

Steam or boil your chopped chunks of cauliflower for about 5–8 mins until they’re nice and soft. Once achieved, let them cool for a bit.

Once that’s done — make sure to squeeze out the excess water (we kinda didn’t really do this which resulted in less flakier crust, so don’t skip this step!) You can do so with a regular towel, paper towels, or via cheese cloths. Whichever method you chose, the best results seem to be done with handfuls of cauliflower at a time, so try not to drain your entire heap of it all at once.

Finally, when the cauliflower is nice & dry — get a strong counterpart to mash it into a nice mix (You can mix it in a blender too but why do that when you can watch muscles get to work … 😏)

Mix in some parmesan, oregano, salt, pepper and an egg and lay it out flat on a pan so that it can cook evenly in the oven at 400 degrees F for around 20ish mins. Halfway through we added in the Marinara tomato sauce with some lactose free Mozzarella on top so that all the flavours could melt together all cozily. 😌

We left the pizza in for about 20ish mins, just check the crust and pull it out once it starts to brown and crisp. You could also start it a bit before you tackle the burgers, that way you’ll have a little snack to munch on while the patties cook.

Step 2: Prep the bison meat patties

Bison mean is less fattier than ground beef, but still has around 7g of total fat per 3oz serving (roughly the size of your palm). It’s got a nice strong meat flavor to it as well, so we merely added some salt & pepper without any added spices that would take away from it’s natural taste.

Just mix that up evenly in a bowl and shape some patties to throw in the oven at 350 degrees F for around 15–20 mins. Bison meat gets hard pretty fast (hey, get your mind out the gutter!) jokes aside - just make sure you don’t cook it for too long, keep your eyes peeled on those strong little patties. 💪🏻

Step 3: Tu sei bello! Ouu, the Portobello shrooms part

We hear shrooms and we think oh boy, down the colorful rabbit hole we go! Don’t worry, these ain’t the little guys that’ll have you seeing the Chesire Cat. 🍄

This step is done at the same time as the patties, so before popping both in the oven — start with dehydrating the Portobello mushrooms, which come in at 3g net carbs per large cap (around 3oz). To do so — just sprinkle a bit of salt on the inside (the gills) to draw out some of the water.

Then, drizzle them with olive oil and flip em’ upside down so they don’t burn & dry up too fast — a wise decision my handsome sous chef made. The mushrooms can stay in as long as the patties.

Step 4: Chop chop chop 🍃

While there’s a raucous going on in the oven, take some time to calmly slice and dice your burger additions. We used tomatoes, avocado, green onions, lactose free mozzarella and jalapenos — which weren’t even that hot! *tears stream down my face as I pretend it’s heat had no effect on me*

Once those are all ready, place them to the side to stack onto your burger like it’s a game of dinner Jenga.

Step 5: DIG IN 🤤

We were salivating the wholeeee time waiting for both the burgers and pizza to be complete, and knowing that we were putting healthy low carb ingredients into our bodies made it even more worth the effort and time that it took us to prep and put it all together.
