Sous-Chef at The Wren
Food represents a lot about a person as a being. It’s kind of hard to put into words for me, but it’s a reflection of your taste, background, culture, really just who you are. Today we see fusion food where people are taking two background and mixing them together and it’s what paints us as the individuals, and society we are today. That’s what the world is, ever changing, and food changes with it. It’s something that’s really cool about food and that’s why I love it.
I’m Dutch and German, so it’s nothing too crazy. It’s an old world style when it comes to food, which is immensely different to North America. But it’s interesting to see how we, as North American’s, have taken those styles, and altered them to make them our own. And I think that’s really what it’s all about. Finding yourself through food.
We live in a day and age where fast food is so readily available for us that we focus on having it now, getting it cheap, and getting on our way. That’s who we’ve become as consumers in today’s society. In a way, we’ve forgotten some of the most important things we can get out of food. But there’s a massive new generation of people who are bringing it back, and the process of making food again. People are starting to get excited about food, which is totally awesome!
