Saffron Cream Soup - Recipe

Soup is good food. Especially, soup seasoned with saffron.

Here is a simple recipe for saffron cream soup:

Ingredients:
- 5 g, Saffron
- 6 potatoes, peeled and chopped
- 10 g ginger, peeled and chopped
- 1 onion, chopped
- 50 g white celery, chopped
- 50 g parsnip, chopped
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Olive oil
- Fresh herbs for the garnish and saffron

Instructions:
1. In a large pot, heat some olive oil over medium heat. Add the saffron, garlic, ginger, celery, parsnip, onion and sauté until softened, about 2 minutes.
2. Add the potatoes to the pot and sauté for another 5 minutes.
3. Pour in the vegetable or chicken broth, and bring to a boil. Reduce heat and simmer until the potatoes are tender, about 20 minutes.
4. Use an immersion blender or transfer the soup to a blender to puree until smooth.
5. Stir in the heavy cream and season with salt and pepper to taste.
6. Strain the cream soup through a sieve.
7. Serve hot, garnished with fresh herbs and saffron.
