9/27-Roasted Cauliflower and Goat Cheese Dipping Sauce

Sometimes the best things in life are simple — like this roasted head of cauliflower. This dish is becoming a staple at middle eastern restaurants and is so unbelievably easy to make. A little oil and salt and a couple hours in the oven transforms this vegetable into a delicious crispy snack or meal. There are so many dips that could go with this dish but we chose a goat cheese one because, well, who doesn’t want more cheese?

Ingredients:

Cauliflower:
1 head of cauliflower
oil
salt

Goat Cheese Dip:
3.5 ounces ounces oat cheese, room temperature
1/2 tablespoon parsley, minced
1.5 tablespoons mixed herbs (thyme, rosemary, mint)
1/2 cup sour cream
1 garlic clove, minced

Directions

Preheat oven to 400 degrees. Wash the Cauliflower and cut off the bottom but make sure the head remains intact. Place the Cauliflower on a baking tray lined with a baking sheet and cover in oil and salt. Place a pan with water on the bottom of your oven while baking so the cauliflower steams and gets softer faster. Put the cauliflower in the oven and cook for about an hour or until cauliflower is soft and crisp on top.

While cauliflower is in the oven work on dipping sauce. Place all ingredients in the bowl of a food processor. Pulse until mixture comes together but is not pureed. When cauliflower is ready dip and enjoy!
