Paella night (GF)
As you probably noticed by now, I’m all about food and cooking. I can do it every day, all day, talk about it, review it, explore & try new stuff. So it wasn’t any surprise for me when my friend offered me to try some new recipes with her and see where we could take it from there.
We did choose a really simple Paella recipe, because the time was becoming late and I have to admit that i never tried it before. Maybe because it’s always made with seafood or pork, that I don’t eat, or maybe I just missed it because every time it was in the menu, I had other more exciting dishes to try. But no more excuses, it’s now time to try.
My friend is pescetarian and my husband is vegetarian (I know, life is tough), so we chose vegetarian and fish recipes. Paella is a really simple dish and good for a family meal. It was nice and tasty, and although it’s not going to be my favorite dish, I’m definitely going to make it again.
- 1/4 cup olive oil
- 3 tsp paprika
- 1/2 tsp saffron
- 1/4 white fish fillet
- 1 big onion
- 2 garlic cloves
- 1 diced red pepper
- 2 cups of rice (preferably round)
- 1 tsp cumin
- 1 cup of white wine
- 3 cups of water or stock
- 1 cup of peas
- 1 tbsp chopped cilantro
Fry the onion in the oil until it’s soft. Add the garlic and the red pepper. Add the salt to taste, paprika, cumin and saffron. Add the rice and stir for 2 minutes. Add the water & cook for 17 minutes on low fire. While the rice is cooking, grill the fish with paprika, salt & pepper. Chop the remainder of the fish, & stir it with paprika. Add the wine. Cook for another 2 minutes.
Once the rice is ready, add it to the fish, together with the peas, & cook for another 5 minutes. Now is the time to fix salt & pepper.
Serve with the grilled fish on top, & garnish with cilantro.
