Stuffed Onions (GF) (V)

Last Friday we had some friends for dinner, so I decided to make this dish for the first time in my life. It sounds like a very technical and difficult dish but actually if you follow the steps it’s really easy and simple.
I hope you all will try it and enjoy it as we did. I made it vegan but you can add beef to the filling and it will be even better.

Ingredients:

  • 4 large white onions
  • 1 cup rice
  • 1 package of mushrooms ( I used Wegman’s mix but you can choose whatever you like)
  • 1 small onion for the filling
  • salt
  • pepper
  • 1 tbsp paprika
  • 1 tbsp shawarma spice (can use cumin instead)
  • 2 tbsp date honey syrup (can use regular honey also)
  • 1/2 cup soy sauce

Instructions:

Peel the big onions and boil them for 10 minutes. Cut in the middle to the center as shown in picture #1 and split each layer as shown in picture #2.
Steam the mushrooms, small onion, salt, pepper and spices, and verify that they taste good. Add the raw rice and steam for another 3 minutes. Let cool for 15 minutes.

Fill the onions layers and roll them as shown in picture #3 (when you put the filling it will roll by itself). Put the remaining onions that you couldn’t fill on the button of the pot. Add all the stuffed onions with the stitch down (try to do it in one layer). Mix the date honey syrup, soy & pepper together, add 2 cups of water (I used the water from the onions that I boiled earlier). Pour on the onions until they’re covered about 3 cm over. Put a plate on top and cook on low heat for 30 minutes. After 30 minutes taste the rice & if it’s ready it’s done, otherwise cook for another 10-15 minutes.
