Estofado de Lentejas — Con embutidos Ibèricos

When what you got one night was so good but you can’t remember the name, all you’re left with are the memories of the texture and flavor, and maybe a photo from before the main event.

This photo suggested that the dish was delicious…and so it was.

Lentils were lost in some sort of a thick soupy broth, some vegetables although uncertain, and pork ribs embedded amongst the legumes. Served in a cast iron pot, reminding me of the good ole days, I felt a nostalgic comfort with every bite.

The only thing that kept this dish from being perfect was that it was a bit too salty for my liking. But much like wanting to be cuddled despite the sweat and heat from your partner, I couldn’t stop going back for more.
