Roasted Broccoli — manchego sauce, jalapeño purée, cured egg yolk

Sometimes, the most exciting part is not what’s on the main body of the dish, but rather, what’s off.

In this case, that little dollop of spicy excitement tossed aside had me sweating.

Just looking at the golden curls on the mouthwatering manchego made me eager to smear the strong stock of green in it before stuffing the whole thing in my mouth.

I never knew how much I liked broccoli until I had this plate of it.

It was the best of all the plates.
