It’s Good to be Cheesy!

Potato is one of those veggies that can be used in more ways than one. It’s versatility is something to admire and relish. It tastes great as a meal and even better as a snack.

Stuff it in a paratha, boil it in a curry, fry it and garnish it with spices, do whatever and it will not let you down. A saviour for the ones pressed for time and a boon for the chefs, potatos are truly apeeling to all age groups.

Whilst there are many ways to enjoy the potato, here is one that will surely strike a chord with you.

Cheesy Mashed Potato Bites

Sounds like heaven. And why not? Its got cheese in it and it’s got potato in it. When fried to perfection, the cheesy centre will lift you to cloud nine. It’s fun and easy to make and makes for the perfect evening snack.

This is what you’ll need

  • 2 cups cold mashed potatoes
  • ¼ cup minced chives or green onions
  • 16 cubes quick-melt cheese
  • 2 beaten eggs
  • ⅓ cup all-purpose flour
  • 1 cup bread crumbs
  • Vegetable oil for frying

This is how you make it

  1. Boil and mash the potatoes and season it with chives, salt and pepper.
  2. Make golf ball sized portions of mashed potatoes and press a cube of cheese in the centre and roll the potato around it and make it into a ball. Repeat this with the remaining potatoes and cheese.
  3. Roll the balls in flour and then eggs and then into the breadcrumbs until it is completely coated. Repeat this with the remaining potato balls.
  4. Place the coated potato balls in the freezer for an hour until firm.
  5. Pour enough vegetable oil into a medium saucepan to reach a depth of two inches. Heat over medium heat until it reaches about 175 degrees Celsius
  6. Remove the potato balls from the freezer and carefully lower several at a time into the hot oil. Fry the potato balls until golden brown, for about four minutes.
  7. Serve with gravy for dipping, if desired.
