Teriyaki Tofu rice Bowl

Used extensively in Asian cuisine, Teriyaki (derived from Japanese words tare — which means glaze from the sugar content and yaki — translated as cooking method of grilling or broiling) is both a sauce and cooking technique. The sauce is made with soy sauce, mirin (a type of rice wine) and sugar (or honey) and the cooking style involves dipping/grilling or broiling the meat or vegetables in the sauce.

Ingredients:

3 — chopped garlic cloves
1- chopped onion
1 — tbsp dark soya sauce
2 — diced peppers (Green and red)
1- round cut leek
1- diced tofu
1- tbsp corn flour (diluted in water)
4 — tbsp vegetable oil
4 — tbsp Teriyaki Sauce (readymade can also be used)
Chopped ginger
Finely chopped leeks
Salt to taste

Method:

1. Heat a pan with vegetable oil and sauté chopped garlic, ginger and onion
2. Once slightly brown, lower the heat and add the Teriyaki sauce (you can use ready-made also) add water mixed in cornflour and dark soya sauce until the mix is little thick.
3. Balance the flavour with salt and add diced peppers, leek and tofu, wait till the veggies are moist.
4. Mix well until all the veggies are well coated in the sauce.
5. Pair this flavoursome curry with aromatic rice (rice cooked with veggies) or plain rice. Garnish with spring onions and roasted sesame seeds. Serves for 2.
