Monday Done Right with Chasseur Sauce
Traditional French “hunter sauce” is here — Chasseur sauce made with is a simple ingredients which are the basic compounds of brown sauce used in French cuisine. To be more precise it is made with sauteed mushrooms, shallots and a white wine reduction which is then simmered in a basic demi-glaze.
It will now ring a bell as this sauce is used extensively as this was the first sauce to have the wine reduction and creating a creamy texture which is unusual to get as there is no use of corn starch or flour. This creamy delight is delicious and wonderfully works with any meat. Traditionally, a rabbit or venison would be paired with this delight. You can whip up this delicious sauce at home and use it as a base of curry for your jasmine rice or just a dipping sauce to your chicken fingers. Make it the traditional way or add a dash of red wine instead you have yourself a perfect, velvety smooth, red demi-glaze (of course the flavour vary but it is equally delicious in it’s own unique way).
