Morocco is the hub for all kinds of Mediterranean fruits and vegetables. Moroccan cuisine is inspired by the Middle East where the art of cooking delicacies with unique spices is world famous, be it couscous or Lamb slow cooked in a tagine.

Even today traditional forms of cooking on open coal, barrel burn, smoke cooking or ground cover cooking are used extensively. Moroccan spice invades a particular meat or vegetable and gives a perfect rustic, tasty touch to the dish. Their unique spice mix generally consists of ginger, white pepper, coriander, turmeric, cinnamon and all spice. Moroccan spices are some of the best in the world. Travelers from around the world come for the unique saffron from Talaouine, mint and olives from Meknes, and oranges and lemons from Fes. The best thing about Moroccan spices are that you can use them as seasoning or even use it as a rub for your meat and it gives the perfect balance of flavours.
