Twice cooking is largely found in a variety of meats, it can be a scrumptious pork belly or just a beef steak. This technique involves two ways of cooking which can range from boiling to stir fry and pan-fried to roasting, this technique is largely followed in high-end restaurants mainly to achieve all its natural flavours and get the maximum taste.

This method is widely followed around cities that are fond of fusion food, like an Italian roast with Chinese wok-toss. The list of double cooking method is limitless and to master this technique is also an art, chefs spend their life-time in mastering this style only to attain the stature of knowing this one-of-a-kind culinary revolution. Some use this technique as their secret weapon (secret ingredient) to their signature dishes. (Hah! Now we know!)

Double fry technique is used widely in our fried items especially french fries and chicken nuggets. Usually the process for frying is the same until the first batch of frying, after which you take the fried item and dipping it in another spiced batter or crumb delight to fry to crispy goodness! Yes, this is true and it is followed religiously when it comes to fried foods!

We can master this at home as well just by following a few ways and methods. For you can simmer a meat in a boiler at a certain temperature and then refrigerator at a particular cooling and wok-tossing them in a particular mix of sauces (as some may be camouflaged with the spice level).

Today we are featuring our special dish which comes with this unique and impeccable combination of technique. Try our French Double Cooked Chicken made with chicken marinated in garlic, fresh thyme and rosemary and is cooked twice. First it is grilled and then baked till golden brown.
