Over Teaguey

Always look on the sunny side of life

I think I invented a new way to cook an egg. Similar to over easy, but the moment before flipping you slightly puncture yolk with the corner of spatula. Results in maintained yolk coherence, but without liquid center. Better on sandwiches.

“Over Teaguey”


  • Two eggs
  • Pita bread (optionally gluten free)
  • Sliced cheese, 1 to 2 slices (optionally dairy free)

* I am partial to gouda cheese, provolone also good

  • Hummus (everything bagel flavor is good, optionally can substitute guacamole)
  • 2 or 3 tomato slices
  • Balsamic Vinegar


  • Small skillet and spatula
  • Air fryer


  1. In a small, lightly greased skillet on medium high heat add two eggs, with salt and pepper or other seasonings to taste
  2. While eggs start to cook, cut one edge along side of pita to create a “pocket”
  3. Add generous spread of hummus within pocket
  4. Add tomatoes and 1 to 2 slices of cheese within pita
  5. Place pita in air fryer to heat while eggs are cooking
  6. Eggs will have another minute or two, can use this time to empty the dishwasher or make coffee or something if you want
  7. Once eggs have started to firm to the point that one can flip without scrambling, and here is the secret sauce, the moment before flipping, poke the yolk centers with the corner of your spatula. (By breaking the yoke skin just before flipping, it allows cooking to an over-easy consistency and maintained yoke coherence but without an overly liquid center, which would otherwise make for a messy sandwich)
  8. After flipping can add a dollop of balsamic vinegar to top of egg to jazz it up a bit, continue cooking for another 60 seconds or so
  9. Remove pita from air fryer, cut eggs in half with a yolk on each side, insert into pocket
