Do You Have Leftover Vegetables?

Make a Delicious Easy Dinner!!!!

If you are trying to save money, you should work on not throwing food away. This can be difficult at the beginning until you figure out portion sizes and exactly how much to buy. If you are shopping at a store like Aldi’s that has most vegetables pre-packaged this can also be difficult.

Learning how to use leftover food is a skill and one you can master! One of my favorite “free” meals is stir fry. I call it a “free” meal because I have already spent the money on the vegetables for other meals. Stir fry can be anything you want it to be. And it is super easy. Nearly any vegetable can be used and making your own sauce is a breeze. Yes, I said your own sauce. Do not be intimidated…I promise this is simple.

First, look in your fridge to see what you have leftover. Most recently I found the following:

1/2 head of broccoli

1 yellow squash

4 mushrooms

1/2 green pepper

celery, carrots, onion (I always have these in my house)

*You can use whatever you have on hand. Snow peas, a can of baby corn, water chestnuts, frozen peas, other squash, eggplant, the options are limitless.

That’s it. I am now able to make a delicious and easy dinner. If you want to add a meat or tofu you can do this as well. Beans work equally as well. If you have some leftover from a previous meal even better!

From here you will cut up the vegetables. Cook the onion in some oil until it is translucent. Add the other veggies and cook for a few minutes while you make your sauce.

1/2 cup soy sauce

1 cup hot vegetable broth or water

1 TBL cornstarch or flour

1 tsp sesame oil (if you do not have this don’t worry)

1/2 tsp red chili flakes

Mix all of the above in a small bowl or mug until the cornstarch is fully incorporated (this is called a slurry)

Add the sauce to the pan. Cover and simmer until veggies are complete.
Add your protein at the end of this and heat until warm (if you are using raw meat, cook in a separate pan before this step)

You can make modifications to the sauce as you see fit.

Serve the stir fry with rice or noodles.
