Wikipedia defines A-gei as “a special food that consists of a piece of fried tofu stuffed with glass noodles,” but anyone who has tasted this tasty dish will agree that this definition is far too simple. So, one of the reasons why A-gei is considered to be a complex dish is because it can be prepared with a variety of ingredients. For instance, in the traditional preparation, people add squid and crab in A-gei. However, the surimi(filling) inside A-gei could be made with salmon or any other fish you like. The sauce is also an important part of A-gei. People usually have A-gei with a soy-bean sauce and a sweet chili sauce. Regardless of the ingredients in A-gei, this dish from Tamsui District is definitely one of the most delicious food in Taiwan.
