Fantastic Oyster Omelette

Wikipedia defines oyster omelette as “ an omelette with filling primarily composed of small oysters, “ and it is a well-known street dish in South East Asian countries, and also in Taiwan and China. An oyster omelette, which is one of the most popular night market food in Taiwan, combines a variety of ingredients. For instance, starch is an ingredient used to mix into the egg batter in order to make the egg wrap thicker. Also, people use pork lard to fry the omelette to make it crispier and smell good. Other kinds of oyster omelette can be substituted with shrimp, squid, or crab. Moreover, the spicy chili sauce with lime juice highlights this dish. Although it is not a pretty dish, people usually become a big fan after they gather courage to try it. All in all, it is a classic dish that represents Taiwanese culture.
