In Wikipedia, oyster misua is defined as “a kind of noodle soup that is popular in Taiwan, and consists of oysters, potato starch, and misua.” However, there is more to this palatable dish. Oyster misua is a unique noodle soup which contains a soup base made from bonito fish stock and then combined with tan-brown thin noodles called vermicelli. This dish is often served with oysters, but can be substituted with pig intestines instead. Oyster misua originated from Changhua, and it has a strong taste of garlic, seafood, black vinegar, and coriander. Although it is not a fancy dish, it is one of the most iconic seafood dishes in Taiwan.
