I love the refreshing flavor of lemon.

Whether the fruit’s zest or juice is added to a sweet or a savoury dish, the taste is always a welcome addition.

You can smell it before it touches your tongue. The clean, fresh aroma permeates your senses.

When you taste it, your mouth begins to water. The citrus, no matter how big or small an amount, will have an impact on your palate.

Try this Luscious Lemon Loaf for an afternoon snack or an accompaniment to tea. Dress it up with a glaze, if you’d like (mix ½ cup icing sugar, juice of 1 lemon, ¼ teaspoon zest, drizzle over cooled loaf), or enjoy it with some Limoncello.

Luscious Lemon Loaf
Makes 1 Loaf

Ingredients:
1 ½ cups all-purpose unbleached flour
2 ¼ teaspoons baking powder
¼ teaspoon sea salt
2 large eggs
¾ cup granulated sugar
2 tablespoons oil
2 teaspoons pure vanilla extract
¾ cup skim milk
2 tablespoons fresh lemon juice (from 1 large lemon)
Finely grated fresh lemon zest from 1 large lemon

Instructions:
1) Preheat oven to 350 degrees Fahrenheit, and lightly grease a loaf pan.

2) In a small bowl, whisk the flour, baking powder, and sea salt, and set aside.

3) In a large bowl, lightly whisk the eggs. Add the sugar, oil, vanilla extract, skim milk, lemon juice, and lemon zest. Whisk until combined.

4) Pour the dry ingredients into the wet ones and mix well. Pour the batter into the greased loaf pan and bake for about one hour, or until a toothpick inserted in the centre comes out clean. Cool completely on a wire rack.
