Basic glorified rice

Here is the basic recipe for the pink glorified rice that is a staple among many Scandinavian pot lucks, smorgasbords and family reunions.

  • 1 cup white rice, cooked in water, dash of salt, no fats like butter, cooled
  • 2 cups Cool Whip. Don’t use whipped cream; it’s not better.
  • 1 cup mini mashmallows
  • 1 packet of cherry Jello
  • 1 can of maraschino cherries, cut in halves or quarters

Break the rice up into separate grains if it has clumped. Make sure the bowl in chilled. Sprinkle a light layer of cherry jello on top of the rice. If you get too much, your rice will be cloyingly sweet. Fold in the Cool Whip until well blended. Add the marshmallows and lastly, fold the cherries in gently, just enough to distribute them, but not broken.

Spoon into serving dishes (or eat directly from the mixing bowl with the spoon… we won’t judge, we’ve all been there!)
