對美食家來說,新橫濱拉麵博物館,是有趣的謎;既有適合觀光客的裝潢,也有極具啟發性的食物。

For gourmets, the Shin-Yokohama Ramen Museum is an interesting mystery; both for tourists and decoration, but also enlightening food.

「無垢-muku-ZWEITE」位於其中,是一家吃過一次終生難忘的拉麵店,那碗「無垢ZWEITE拉麵」,充滿奇妙元素,堪稱一次愉快的味蕾冒險。

“Muku-ZWEITE” is located in this museum. It is a ramen shop that will be unforgettable once in a lifetime. Their “Muku-ZWEITE Ramen” is full of wonderful elements and is a pleasant taste bud adventure.

店名「無垢-muku-ZWEITE」,德文「ZWEITE」就是「2」,據說是德國創始店「無垢-muku」的二號分店,以此為名。

The Ramen shop name is “Muku-ZWEITE”. The German “ZWEITE” is “2”. It is said to be the second branch of their original German restaurant.

廚房上方黑板寫有熱紅酒、巴伐利亞啤酒等酒精飲料,此外,還有POMMES(炸薯條)或香腸等德國風味下酒菜。

Alcoholic beverages such as mulled wine and Bavarian beer are written on the blackboard above the kitchen, as well as German-style appetizers such as POMMES (fries) or sausages.

重點還是那碗「無垢ZWEITE拉麵」,豚骨與雞高湯熬製的湯頭,乍聽不特別,但湯裡嚐得出德國酸菜味道,混合了黑胡椒與香辛料提味。

The focus is still on the “Muku-ZWEITE Ramen Noodles”, a soup made with pork bones and chicken broth and the special ingredient is German sauerkraut mixed with black pepper and spices.

但網上的食物評論,都沒有談到一件事:

When “Muku-ZWEITE Ramen” comes to the table, the surface of the whole bowl of ramen soup has a very delicate foam similar to latte coffee foam.

When this mysterious foam wraps the seasoning in the soup, it bursts open in the mouth. Sometimes, the taste of this bowl of ramen is instantly unique, and it will be hard to forget when you taste it.

日本不缺和洋混合的食物創意,但「無垢ZWEITE拉麵」這種料理,不只是從食材與調味料上擷取東西方的特色,從料理過程到上桌前的湯汁呈現,都改變了混合味覺的方式。

Japan does not lack the creative ideas of mixing Japanese and foreign foods. However, the “Muku-ZWEITE Ramen” is not only extracting the characteristics of the East and the West from the ingredients and seasonings but also changes the mixing from the cooking process to the presentation of the soup before serving.

這碗拉麵,沒有你預期中拉麵的味道,但吃麵的過程,卻成為一段「以拉麵形式進行的冒險旅遊」。

This ramen does not have the taste of ramen you expected, but the process of eating noodles has become an “adventure tour in the form of ramen”.
