A collection of recipes giving you options to eat at least one meatless meal every Monday
A quick introduction: I’m Gideon: a former chapter President and now marketing officer for the H.E.A.T. Establishment — a social service organization. Meat Free Monday is a not-for-profit campaign launched by Paul, Mary and Stella McCartney in 2009. The aim is to raise awareness of the detrimental environmental impact of eating meat, and to encourage people to help slow climate change, preserve precious natural resources and improve their health by having at least one meat free day each week. With this series of posts, I’m sharing animal free recipes that will help you go completely meatless every Monday, but this month, we’re starting with just one meal.
The recipe for today is all about tacos. For the bulk of the tacos I made some cilantro lime rice and refried black beans. Roasted some corn, made two sauces: avocado and red pepper, then a little cherry tomato pico de gallo. Hope you enjoy this one!
Ingredients
- 2 cups flour
- 1⁄2 teaspoon salt
- 1⁄4 cup vegetable shortening or 1⁄4 cup vegetable oil
- 1 teaspoon baking powder
- 1⁄2 cup warm water (may possibly need to add more, up to 1 cup)
- 2 (14 ounce) cans black beans, drained and rinsed
- 2 small garlic cloves, minced
- 2 tablespoons olive oil
- salt and pepper
- 1 large avocado, sliced into long strips
- 1 to 2 medium limes, juiced
- 1 medium jalapeño, deseeded, membranes removed and roughly chopped
- 1 handful fresh cilantro
- ¼ teaspoon salt
For the roasted red bell pepper sauce:
- 2 large red bell peppers
- 1–2 fresh green jalapenos
- 4 whole cloves garlic, peeled
- 1/4 cup cashews (presoaked for ~2 hourS)
- 1/4 + 1/8 teasp salt
- 2 1/2 teasp fresh lemon juice
- 1/4 teasp apple cider vinegar (or more lemon juice)
- 1/4 cup water
- freshly ground black pepper
