Coconut Almond Energy Balls
Need a pick-me-up? These easy no-bake energy balls will fuel you up and satisfy those sweet cravings.

2/3 cup shredded coconut, toasted
1 cup gluten-free oats
1/2 cup almond butter
3 tbsp chia seed, ground
1/4 cup maple syrup
3/4 tsp pure vanilla extract
1/3 cup almonds, toasted and chopped
1/2 cup dried cherries
2 tbsp water
1. In a bowl, combine all ingredients except for the water. Cover and refrigerate for 30 minutes. The mix needs time to stick together and not be dry. Add the water to moisten as needed.
2. Roll the mixture into 1–1/2 inch balls, making about 22 total.
3. Store in an airtight container and refrigerate for one week. Alternately, you can freeze them and thaw as needed.
