Plant based milk; it attracts quite a few laughs — “hey, it is not milk”. Well, I am glad that it’s not. It’s plant extract, and it can be as clean as you can make it (using organic & non GMO nuts & seeds), plus super nutritious.

Now let’s talk about the oh-so-wholesome real milk (dairy). Is it really as healthy as we think it is?

Plant based nut milk.

Sure, maybe it is. When it is obtained from the cows who roam freely in the meadows, eat lush green organic grass, are happy and loved (as their calves aren’t snatched away after giving birth) and aren’t injected with hormones to produce bulk milk. Sigh! What a beautiful dream in today’s world. But here’s the unpalatable truth. Today, most of the packs on the shelves and milk bought from the local dairy houses are from the hormone injected cows, probably doing more harm to the bodies than good.

Lot of people ask, how is it affecting cows? Here’s another truth — their lifespan reduces from 18–22 yrs to 4–5 years, calves are separated after birth and sent to slaughter houses.

And after the cows are utilized to the core (unfortunately, they are treated as things, no place for empathy here), they are sent to become meat to be served on someone’s plate. The story doesn’t end there. To produce one litre of milk on an average 1.25 kg of grains and about 1000 litre of water. Can you see the environmental crisis that we are bringing upon the planet, just to satiate our craving for milk and milk products.

I know it’s hard to quit. But can we start reducing the consumption to maybe 3 days a weeks. Substitute it with nut or seed milk — Cashews, almonds, coconut, walnuts, hazelnuts, melon seed and there are so many more options. And they are so easy to make at home. Here I am sharing what I have learnt, to help you help the planet :)

Go slow, step-by-step and break years of unnecessary conditioning. For me, it’s been 6 months of quitting dairy, but it took over a year of thinking and resisting to act :)

Cashew milk

After zillions of trials and errors, I have found that cashew milk is one of the most versatile plant milk and has a better shelf life. Lasts for 3–4 days.

Most of the plant milk curdle, when boiled. Except for peanut milk, that can be used to make great curd. So never boil plant milk, stir it continuously when you warm it. Cashew milk can be used as a perfect milk (dairy) replacement. I have been using it to make coffee, cookies, cakes, pasta sauce, anything and everything.

HOW TO STORE?

Pour it in a clean sterilized air tight bottle and stick it into the refrigerator. Keep it refrigerated at all times.
