A wholesome treat that shall satiate both your palate and your gut xD

This recipe is for one of those ‘feel-good’ dishes that encompass a blissful mix of taste and health. It is super easy to make, with basic ingredients and a hassle-free cooking procedure.

Recipe: Hummus + Veggie Wrap

Cooking time: 15 minutes (excluding Hummus and roti/tortilla preparation)

Ingredients:

  1. Whole-wheat roti/tortilla.
  2. Hummus spread (boiled chickpeas, garlic, lemon juice, oregano, chilli flakes, pinch of salt).
  3. Carrot, Tomato, Capsicum, Onion.
  4. Chilli powder, paparika powder, oregano, chilli flakes, salt.

Preparation of Hummus spread:

Ground a mix of boiled chickpeas, garlic cloves, lemon juice, oregano herbs, chilli flakes, and a pinch of salt, until a thick but paste-like texture is achieved. Additionally, if you like, you can also mix in some chopped coriander or mint leaves for an added flavour.

Preparation of Hummus + Veggie Wrap:

  1. Finely chop half a capsicum, half a carrot, half an onion and half a tomato.
  2. Crush or dice out your desired amount of cottage cheese and add it to the bowl containing your chopped veggies.
  3. Throw in some black pepper, paparika powder, chilli powder and pinch of salt to the mix and stir well.
  4. Now, dab olive oil/coconut oil (or any oil type of your preference) on a pan and gently stir the vegetable and cottage cheese mixture, until it turns golden brown.
  5. Spread a generous amount of hummus on a whole-wheat roti/tortilla and add the vegetable.
  6. Fold the wrap and Relish!
