An excellent grain-free side dish for roast chicken or Thanksgiving.Made from only a few ingredients,this paleo stuffing will become your favourite thanksgiving dish.

While it lacks sugar, gluten, and grains, this paleo stuffing retains all of the traditional flavors and textures of traditional bread-filled stuffing.Unlike many paleo stuffing recipes, this one does not use cauliflower as the base.Almond flour (or almond meal) is used.

Paleo Stuffing Ingredients:

  • ghee or avocado oil or refined coconut oil
  • onion diced
  • celery diced
  • mushrooms diced
  • apple cored and diced
  • cranberries or dates, chopped
  • flat-leaf parsley chopped
  • poultry seasoning
  • salt
  • black pepper
  • almond flour
  • eggs whisked

Instructions:

  1. Preheat oven to 350º Fahrenheit. Heat ghee or oil in a large cast-iron or oven-safe skillet over medium heat.
  2. Add onion, celery, apple, mushrooms, cranberries or dates, parsley, poultry seasoning, salt, and pepper. Sauté until ingredients are very soft, about 7 minutes.
  3. Remove skillet from heat. Keep ingredients in oven-safe skillet, or, alternately, transfer ingredients to 9×9″ baking dish.
  4. Stir almond flour in to other ingredients until well mixed. Add the whisked eggs and stir well. Place skillet (or baking dish) in preheated oven and bake 45 minutes to 1 hour, or until stuffing is browned on top. Serve warm.

Paleo Stuffing Tips:

Vegetables should only be sautéed for so long that they become extremely soft.Like a traditional dressing, this helps everything in this healthy paleo stuffing recipe blend beautifully.
You can make your own poultry seasoning or use dried herbs.
If you strictly adhere to the paleo diet, choose dried cranberries that have been sweetened with juice rather than sugar.
You can make this healthy stuffing ahead of time because it holds up well when reheated.
This whole paleo stuffing recipe can be made in a large oven-safe skillet or baked in a casserole dish.

If you want to give this stuffing a slightly different flavor, you can add other seasonings like fresh or dried rosemary or basil.

You want to cover your stuffing when baking for the first 40 minutes, and then uncover it for the remaining 10–15 minutes.

Storage:

Store this stuffing in the fridge in an air tight container for up to 5 days.

Can It be prepared in advance?

Stuffing should not be prepared in advance, which is not recommended.On the other hand, it is simple to prepare all of the ingredients the day before and then simply combine them on the day that you are ready to cook the stuffing.

To Freeze:

Stuffing can be frozen for months by placing it in an airtight container or bag in the freezer.To prevent the stuffing from becoming too dry, place it in the oven at 350°F for approximately 20 minutes.

Paleo Stuffing Variations:

  • Use chopped dates in place of the dried cranberries, or add 1/4 cup chopped dates to the whole thing!
  • Increase the amount of celery by 1 cup and leave out the mushrooms, if you don’t like fungi.

Dairy Paleo Stuffing :To sauté the onions and celery, substitute oil, dairy-free butter, or oil for ghee.
Veggie lover Paleo Stuffing Choice:When sautéing the vegetables and veggie broth, substitute oil for the ghee.Before mixing the almond bread cubes into the stuffing mixture, toast them to help them dry out after baking and use flaxeggs in place of chicken eggs.
