Don’t Wait- Get That Health Kick Going Now With Our Kefir Muffin Recipe!

Okay, so maybe you had one too many Santa cookies over this holiday (as you wipe the crumbs off of your shirt), but don’t let that stop you from getting back to your healthy routine! We all know that cookies for breakfast can be delightful, but maybe isn’t the best option. So, let’s not wait for the New Year! Get your healthy breakfast going with this Granola Kefir Muffin!

Ingredients:

  • 1–1/2 cups granola
  • 1 cup plain kefir
  • 1 egg
  • 1/2 cup maple syrup
  • 1 cup whole wheat pastry flour
  • 1/2 tsp. sea salt
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 cup butter, melted

Directions:

  1. Soak the granola in the kefir for 5 minutes or more (the longer it soaks, the lighter the muffin).
  2. Stir in egg and maple syrup.
  3. Mix together the dry ingredients.
  4. Stir into the granola mixture.
  5. Finally, mix in melted margarine.
  6. Bake in greased muffin tins at 400° for 15–20 minutes. Makes 8–9 good sized muffins or 1 doz. small muffins.
