Nutrition Alert— Basil Cherry Tomato Zoodles
Some times, we all crave something light and fresh and that’s when Zoodles come to the rescue. It’s not necessary to hop on to a restaurant each time you feel like having Zoodles which are basically Zucchini Noodles. I have always had it outside, but I was seeing some videos and thought, why not give it a try at home sweet home.
The only thing necessary for creating Zoodles, is a simple instrument called Spiralizer available on Amazon for < $5 and you are all set.
It’s a perfect tropical addition to your diet. Its light, its zesty, its nutritious and of course, its low on calories.
Recipe ( Serves 2) — Takes 15 minutes
Zucchini — 2
Cherry Tomato — 400gm
Basil leaves — Just a fistful
Condiments — Stevia / Dates, Salt, Black Pepper
Calories — 80–100
- Using a Spiralizer, make your Zucchini Noodles . I have heard you can do it using a peeler as well but that will take more time.
- Use approx 200gm. of cherry tomatoes, a fistful of basil leaves add some stevia, salt and black pepper in the mixer as per taste and pulse it.
- Now I like a warm salad after work, so I warmed up the saucy mixture created and added to a pan ( If you do not want to make it a Satvik salad, you can add garlic and onion and sautee well without oil), kept until boil and then added zucchini in it for less than 30 seconds.
- You can also, just pour the mixture over zoodles without warming them up, and voila you have a zesty and summer fresh Zoodles ready!!
P.S. If you are not avoiding dates in your diet, please sweeten the cherry tomato mixture with 4–5 pitted dates instead of stevia for a more natural sweetness.
