Nutrition Alert — South Indian Style Zucchini vegetable
Most of folks across the world are no stranger to Indian cuisine.
Indians typically eat flatbread also known as ‘ Roti’ with cooked vegetables with spices. Now, Zucchini, while now, available in India freely is not something that is generally used for cooking. So this is truly a great vegetable to be had with flatbreads and trust me on this, its light on stomach, so juicy and super refreshing for the summers. And whatever diet you are on, I don’t care (as long as you are not allergic), but I strictly instruct you to use the coconut!! Period!
Recipe ( Serves 2)
Zucchini — 2
One small piece of coconut (grated)
Spices (Mustard seeds, asafoetida, curry leaves, half green chilly)
2 tspn oil
Now the magic:
- Dice the zucchini into small cubes
- Take a small non stick pan and add 2 tspn oil in it.
- Use some mustard for tempering ( 1 tspn ) and add chopped green chilly in it. Add some curry leaves in it.
- Now, add the diced zucchini in the pan and sautee it.
- Close the lid and let it become a little soft or al dente for next 5 minutes
- Open the lid, and add the freshly grated coconut on top of the vegetable / sabzi
- Take a flatbread and enjoy the magical combination.
I have had it consecutively for 2 days so you can understand it the best!!!
