Healthy Recipes with Sorghum!

Sorghum can be used for making various interesting recipes. It can be easily incorporated in your diet and thus you can reap its benefits. As discussed in the previous article, sorghum is rich in nutrients such as dietary fiber and antioxidants. 1. Popping Sorghum is a great way of enjoying the nutritious grain. It is mildly sweet to taste.
Heat a vessel with just 1–2 tsp. Then add a cup of raw sorghum grains washed and dried. Close the lid tight. After sometime the grain will start popping up. Serve these as an evening snack which healthy and tasty.

2. Sorghum and Vegetable Porridge

A good and sumptuous breakfast option. Easy to make. Cook Sorghum whole grains in vessel add enough water and cook for some time. Add some chopped veggies such as carrots, tomatoes, green peas, cauliflower or any other of your choice Stir occasionally and add water as necessary. Later add a little salt and spices and cook till soft.

3. Sorghum Flat Bread/Roti/Bhakri

Whole sorghum grain is milled to get the whole sorghum flour. Now this flour can be used for making multiple recipes/food products.
The most common product made out of it is the flat bread, also called as roti or bhakri in some regional languages.
All you need to do is add some water to the flour and kneed a dough out of it. The dough then is supposed to be flattened with you hand to get a flat bread. Which is then roasted by placing it on a heated flat pan or tawa over medium flame. One roasted properly, it is ready to be served. It is eaten along with a curry/gravy or stews/soups or dips/yogurt.

4. Sorghum in Salad

You can make various wholesome and scrumptious salads by adding sorghum in. One such being Bean and Sorghum Salad. Any beans will do. Add the cooked whole beans and sorghum to a raw and cut colorful veggies. Mix in a dash of lime juice and a pinch of salt and with freshly crushed pepper and viola, the salad is done already! You can add some fresh or dried herbs of your choice as well.

5. Sorghum Pancake

We are talking about savory and really healthy pancakes over here. Sorghum flour is needed here, add buttermilk to it to make a batter out of it. Add some finely chopped onion-tomato-coriander or cilantro (you can also add some grated beetroot and carrot to make it more nutrient rich)

6. Sorghum-Oats-Berry Blast

This is also a yummy option your tummy would be surely happy with. Cook the whole sorghum and oats separately then and a tablespoon of both to a bowl, mix a tablespoon of low fat yogurt, add chopped mixed nuts and berries on top (such as cut strawberries, some blue berries, raspberries as per availability) and mix together. You can add a tsp. of honey, if required.

7. Stir fried Veggies and Sorghum Bowl

Add some cooked sorghum grains to your favorite lot of veggies and it imparts a delicious nutty taste to the recipe of the otherwise simple vegetable stir fry. To add the protein to this, add some pieces of tofu or chicken and a tsp. or so of soy sauce and some freshly chopped red chillies and it will turn into Asian Sorghum-Tofu/Chicken and Veggie stir fry!!

8. Sorghum and Egg Scramble

Add cooked whole sorghum to the regular scrambled eggs, add in the veggies and make a one meal dish out of it!! 1 -2 tablespoon of cooked sorghum grain can be added one or two scrambled eggs. The veggies that would go well with it would be onions, capsicum, spinach, and zucchini and add in some mushrooms for that lovely flavor. Add some lime juice just before serving.
