Make this the best Father’s Day ever

Not all heroes wear capes.

This Sunday is Father’s Day, and it’s the one day of the year dedicated to showing appreciation for all the Super Dads out there. While you should celebrate your parents all year round, there’s something exciting about going all out on June 18th.

Last month, you celebrated your Super Mom and hopefully you took our advice and cooked up a healthy brunch. This Sunday is an opportunity to show how much you’ve improved since then, by whipping up another mind-blowing brunch for dad.

Didn’t quite nail it on Mother’s Day? No problem!

Consider this your second shot at success.

We’ve provided recipes with a higher degree of difficulty because you’ve had a month to improve your cooking skills. However, if you really feel like going back to basics, you can always refer back to the quick and easy Mother’s Day brunch recipes from before. Practice makes perfect!

French Omelette

What you’ll need:

2 Eggs
2 tbsp. water
1/8 tsp. salt
Dash of pepper
1 tsp. butter
1/3 cup filling (such as shredded cheese, finely chopped ham, etc.)

What you’ll do:

Beat eggs, water, salt and pepper in small bowl until blended

Heat butter in 6 to 8-inch nonstick omelet pan or skillet over medium-high heat until hot. Tilt pan to coat bottom. Pour in egg mixture

Continue cooking, tilting pan and gently moving cooked portions as needed

When top surface of eggs is thickened and no visible liquid egg remains, place filling on one side of the omelet. Fold omelet in half with turner

Serve immediately

Spinach and bacon quiche

What you’ll need:

6 large eggs, beaten
1 1/2 cups heavy cream
Salt and pepper
2 cups chopped fresh baby spinach, packed
1 pound bacon, cooked and crumbled
1 1/2 cups shredded Swiss cheese
1 (9-inch) refrigerated pie crust, fitted to a 9-inch glass pie plate

What you’ll do:

Preheat the oven to 375 degrees F

Combine the eggs, cream, salt, and pepper in a food processor or blender

Layer the spinach, bacon, and cheese in the bottom of the pie crust, then pour the egg mixture on top

Bake for 35 to 45 minutes until the egg mixture is set. Cut into 8 wedges

Zucchini Bread

What you’ll need:

3 eggs
2 cups granulated sugar
1 cup vegetable oil
2 cups grated, peeled raw zucchini
3 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon double-acting baking powder
3 teaspoons ground cinnamon
1 cup coarsely chopped walnuts

What you’ll do:

Beat the eggs until light and foamy. Add the sugar, oil, zucchini, and vanilla and mix lightly but well

Combine the flour, salt, soda, baking powder, and cinnamon and add to the egg-zucchini mixture. Stir until well blended, add nuts, and pour into two 9 x 5 x 3 inch greased loaf pans

Bake in a preheated oven at 350°F for 1 hour

Cool on a rack

Regardless of what day of the year it is, you should always be able to treat your parents to a homemade meal. They really do deserve it and they really are superheroes.
