Bhel is our all-time favorite snack. Isn’t it? Let’s give this bhel a Mexican twist to make it more interesting. Mexican bhel is a concoction of various ingredients that can pair with crispy and tasty tortilla chips. This could be one of those filling snacks to keep up your energy levels for longer periods of time. So why wait, let’s get started —

Why is it healthy?

  • Kidney beans are an excellent source of plant-based proteins. They are good quality proteins and sometimes referred to as “poor man’s meat”
  • They contain good amounts of resistant starch, which plays a major role in weight management.
  • Being rich in protein, fiber, and slow-release carbs, they are very effective at maintaining healthy levels of blood sugar.
  • Sweet corn is another source of dietary fiber that aids in digestion and decreases the risk of various chronic inflammation.
  • Capsicum is rich in antioxidants, anti-inflammatory, and anti-cancer benefits.

Who is it for?

People with diabetes can include this in their diet as a snack which will help them feel full and decrease unwanted cravings. This can also be a whole meal for people on a low-carb diet or for people trying to lose weight. Kidney beans can cause bloating and flatulence in some cases. Try and check if you can include or swap it with black-eyed beans or lentils or sprouted kidney beans to minimize bloating or flatulence.

🥗 What you’ll need:

For the salsa

  • Tomato (chopped)- 1/4 cup
  • Onion (chopped)- 1/4 cup
  • Green chilli (chopped)- 1 or 2
  • Coriander leaves (chopped)- 1 tablespoon
  • Garlic (minced)- 2 to 3 cloves
  • Basil leaves (chopped)- 1/4 cup
  • Ketchup- 1 teaspoon
  • Lemon juice- 1 to 2 teaspoon
  • Salt- as per taste

Other ingredients

  • Sweet corn (boiled)- 1/4 cup
  • Capsicum (chopped)- 1/4 cup
  • Rajma/ Kidney beans (boiled)- 1/4 cup
  • Cheese (grated)- 1 tablespoon
  • Salt- as per taste
  • Pepper powder- as per taste (optional)
  • Oil- as required

For the tortilla chips

  • Whole wheat flour- 1/2 cup
  • Salt- as per taste

✋Method:

For the tortilla chips

  1. First, combine the flour and salt with some water in a deep bowl and knead into a soft dough. Divide the dough into equal portions. Roll out a portion into a round shape.
  2. Then, heat a tawa and place the tortilla over it. Cook it until it turns slightly brown on both sides. Cut into small diamond-shaped pieces
  3. Then, heat some oil in another pan and fry tortilla chips until they turn golden brown and crispy. Set this aside.

To make Mexican bhel

  1. Combine all the ingredients mentioned under salsa along with sweet corn, capsicum, rajma, cheese, salt in a bowl and mix well.
  2. Before serving Mexican bhel add tortilla chips and toss gently. Serve it immediately.
  3. Mexican bhel is ready! :)
