Eat Healthy, stay healthy

Hi Friends, If you are looking for a cake which should not make you fat and put you down with the guilt of having unhealthy maida and oil, then it is the right place for you.

I have come up with a cake which doesn’t include maida, oil or egg.

Prep time: 25 mins
Cook Time: 35–40 mins
Serves: 2 people

INGREDIENTS

  • 2 tablespoon curd
  • 1 cup wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ cup milk
  • ½ cup walnuts
  • 2 tablespoon pistachio, almonds(optional)
  • 1 cup soaked blended dates paste
  • 3–4 soaked dates , chopped
  • 2 tablespoon sugar

METHOD

  1. Dates Paste: Wash the dates and soak the dates in milk for half an hour. This helps the dates to soften.Now remove the seed from the dates.Now check 3–4 dates aside and take the rest and blend in a grinder add some milk in it.
  2. Preheat the oven to 160 C. Line the baking pan with parchment paper.
  3. In a large bowl, add wheat flour, sugar and the dates paste. Mix it gently.
  4. Keep adding some milk while mixing the above paste.
  5. Add vanilla extract. Mix well until fully incorporated.
  6. Now add in baking powder, and baking soda. Mix it well.
  7. Add sugar to the mixture and mix it.
  8. Add in chopped dates and walnuts. Mix it.
  9. Pour the batter into the baking pan
  10. Sprinkle some of the left over nuts in the baking pan.
  11. Now bake it in the preheated oven for 35–40 mins.
  12. Check if its cooked with the help of a toothpick.
  13. Take the cake out of the oven and let it cool.

Now have your delicious cake with some coffee.
