A Konkan Dosa using Watermelon Rind

  1. First, eat the red juicy stuff of the melon.
  2. Then grate the remaining stuff (just like a cucumber ).
  3. For one cup full of this add half a cup of rava and 1/4 cup grated coconut
  4. A pinch of jeera, one chopped green chilli, 1/2 inch piece of ginger grated.
  5. Salt to taste and a tsp of jaggery. (I make a syrup by heating it till it melts).
  6. Knead all this in 2 -3 tbsp of curd. (The consistency should be thick enough to pat onto a oiled tava.)
  7. Pat on the tava and cover with a lid and cook on sim while adding a tsp of oil on the edges of the pancake to crisp the edges.
  8. When the bottom is slightly browned, turn over the dosa, and roast the other side.

Goes very well with a dollop of fresh homemade butter or chutney podi.
