A Konkan Dosa using Watermelon Rind
In the words of our mate Shank who refuses to write on Medium
- First, eat the red juicy stuff of the melon.
- Then grate the remaining stuff (just like a cucumber ).
- For one cup full of this add half a cup of rava and 1/4 cup grated coconut
- A pinch of jeera, one chopped green chilli, 1/2 inch piece of ginger grated.
- Salt to taste and a tsp of jaggery. (I make a syrup by heating it till it melts).
- Knead all this in 2 -3 tbsp of curd. (The consistency should be thick enough to pat onto a oiled tava.)
- Pat on the tava and cover with a lid and cook on sim while adding a tsp of oil on the edges of the pancake to crisp the edges.
- When the bottom is slightly browned, turn over the dosa, and roast the other side.
Goes very well with a dollop of fresh homemade butter or chutney podi.
