Eggless Orange Honey Cake Recipe

INGREDIENTS
Plain flour/Maida — 200gms
Condensed milk — 200ml
Melted butter — 100ml
Orange juice — 100ml
Powdered sugar — 3 tbsp
Baking powder — 1 tsp
Baking soda — 1/2 tsp
Orange zest — 1 tsp
Lemon Juice — 1 tsp
Vanilla essence — 1 tsp

FOR SYRUP
Water — 100ml
Sugar — 2 tbsp
Honey — 4 tbsp

FOR TOPPING
Mixed fruit jam — 4 tbsp
Powdered Sugar — As needed

METHOD

  1. Pre heat the oven to 180 deg C for 10 mts.
  2. Mix all the dry ingredients- flour,baking powder,baking soda with a whisk to ensure even mixing.
  3. In another bowl, mix condensed milk, orange juice, oil, sugar, vanilla essence, lemon juice.
  4. Add flour and mix well. Add orange zest and mix.
  5. Pour the cake batter in to a baking tray greased with butter and dusted with flour. Bake for 25 minutes or until a toothpick inserted comes out clean.
  6. Remove from oven and let it cool down completely.
  7. Prick the cake with tooth pick at various places. Mean while prepare sugar syrup by boiling water and sugar just until sugar dissolves.Mix honey once it’s luke warm.
  8. Heat jam over low flame in a pan until it melts.
  9. Over the flat surface of the cake, pour the prepared syrup generously so that the cake absorbs the syrup. Over this, spread the jam to form a thin layer.
  10. Sprinkle powdered sugar all over the surface to cover up the jam. Cut and serve.
