Seasonal Dining

Throughout the spring months there is a glut of fresh produce in season from cauliflower, kale and tarragon through to asparagus, new potatoes and rhubarb. All of which make for some pretty delicious recipes. How about lemon, thyme and olive oil poached cod loin with charred spring greens, cauliflower puree and a lemon thyme oil? Or smoked duck breast with a cherry compote, tarragon powder and balsamic caviar followed by a rhubarb and ginger panna cotta?

Yes barbecues might be associated more with summer, but as we all know British summer weather is a hard one to predict, one minute it’s raining, the next glorious sunshine. So we’re getting ahead of the game and with the weather starting to warm up, we’re going to be hosting our first BBQs on those sunny spring afternoons.
