For me, it’s the passion of seeing these guys. They started exactly as I did. I know the potential they have.

We deal with people with every kind of issue you can imagine, so they could be dependent on drugs, drink, you name it. It’s challenging but it gets rewarding bit by bit, it breaks down each week. You just give them a skill. Even if they don’t want to be chefs, they learn some other kind of skill and you give them the support they need to go onto that next step. Maybe they’ve got a CV by the end of it. Maybe they’ve just got confidence to get up in the morning, you know. Maybe they’re excited about something else.
