A Pickle with Your Sandwich, Eh? ─ The Rangers and Habs Battle It Out Again

It was an exciting past week in the NHL for the New York Rangers and our friends-across-the-border, the Montreal Canadiens, and we will be getting a good dose of round 2 this week.

There has certainly been some on- and off-ice drama this past week and it will be interesting to see how this all plays out. Dustin Tokarski of the Habs (short for “Les Habitants”), has emerged a superstar, with spectacular plays in Game 3 of the Eastern Conference Finals. From the moment the puck dropped, Tokarski kept the Canadian dream alive, helping serve up a loss to the Rangers on home ice. Two suspensions and a surgery have also kept the storylines hot for these two teams. Chilling words, spars and threats between Rangers’ coach Alain Vigneault and Habs coach Michael Therrien has some Canadiens fans biting their nails and wondering if the second chance at the series will be kept alive.

Hockey drama aside, this series has got me thinking food. I had the chance to visit Montreal for the first time this past October. And when I think of Montreal, my fondest memories are of gorging on poutine. (French fries drowned in gravy, topped with cheese curds and meats). I even had a “gourmet” poutine — fries topped in fois gras. It was decadent.

But since making poutine at home is neither easy nor lends well to my philosophy that food that rich should only be enjoyed once-in-a-while (unless you want gout or diabetes), I’m going to offer up another Montrealese favorite: smoked meat!*

There are three ways to make this and how you choose to do it will depend on your materials at home. If you have a smoker, you’re set and can use the dry rub I’m about to tell you. If you have a grill, you can smoke the meat with wood chips over indirect heat for a while and also use the dry rub. And if you have only a crockpot, that’ll work too!

*This recipe is also great for tailgating come NFL season. It’s a smoky meat recipe that you can cook well ahead of Game Day and can then serve up in the parking lot! For a more Texan flair, substitute your favorite beer for the red wine.

Montrealese Smoked Meat Sammie

Ingredients

Spice Rub
1 teaspoon allspice
1 ½ teaspoons mustard seeds
1 teaspoon dry mustard powder
1 teaspoon coriander seeds
1 ½ teaspoons cumin seeds
1 ½ tablespoons paprika (if you can find smoked paprika, use that!)
2 teaspoons peppercorns
1 teaspoon fennel seeds
1 ½ tablespoon celery seeds
3 garlic cloves, finely minced
2 ½ tablespoons brown sugar
1 ½ tablespoons kosher salt
Montreal Smoked Meat
3 pounds beef brisket, with the fat on
1 cup red wine
6 slices bacon (preferably smoked)
2 cups wood chips (such as apple, cherry or maple), soaked in water for 30 minutes

Preparation

Montreal Spice Rub
Over medium heat, and preferably in a cast iron skillet, toast the seeds, the allspice, and the peppercorns toast the peppercorns, coriander seeds, cumin seeds, fennel seeds mustard seeds. (You do not need to put any oil in the skillet to do this). It should only take about 5 minutes to toast everything, stirring frequently. You will know you’re near done as the spice mix starts to smell (good) quite a bit.

Once the spices are toasted, you’ll need to grind them. If you have a mortar and pestle and have been looking for reasons to use it, now’s your chance! You can also use a food processor here. Once that’s done, combine the ground spices with the remaining spice rub ingredients, stir, and set aside.

Montreal Smoked Meat
First rub half of the spice mixture all over the brisket — and really put some oomph behind it — as in rub it in! Like a brisket massage. Let the brisket marinate in its new goodness for at least an hour — but ideally overnight.

When it’s time to cook, preheat your oven to 250 degrees F.

Place the brisket on a roasting pan rack and add the wine to the roasting pan. Cover the brisket with the slices of bacon. (I call for six slices so you can really cover and smother this puppy in bacon goodness. If you’re not a bacon person, you can completely skip the bacon). Cover the meats with foil and slow cook for 3 hours or until meat is tender.**

**If you want, you can do this step in a slow cooker — i.e. a crockpot. It’ll give you the same results. Just do not overcook it as we don’t want the brisket falling apart — yet.**

Remove the brisket from the oven and remove the bacon. Now add (sprinkling is fine as the meat is now very hot) the other half of the spice mixture to the meat. Smoke the brisket with the wood chips in a smoker over low flame for about 20 to 30 minutes.***

***If you don’t have a smoker, you can do this on the grill. Place the wood chips that have been soaked in water for 30 minutes directly on the gray-ashed charcoal, if using a charcoal grill. If you have a gas grill, you would use your smoker box.

Then place the brisket (fat side up) in center of the cooking grate over the drip pan. You will not turn the brisket during the cooking time at all. Grill the meat until your meat thermometer registers 180°F. (I can’t give you a time on this as charcoals and grill sizes vary. Just note, this could take about an hour or more). When it’s done, remove the brisket from the grill and let rest 20 minutes.***
Remove the brisket and shave the meat into thin slices. Pile the meat generously high between two slices of rye bread slathered in yellow mustard. I like serving with a bowl of pickles and some of your favorite potato chips.
